I love soups! They are easy to make, you can add as many or as few ingredients as you like and you can have them anywhere and anytime you want.
This carrot and ginger soup is made with a teaspoon of SACO ginger flakes. They come in handy when you don't have time to peel, chop and grate fresh ginger.
INGREDIENTS:
- 500g carrots
- 1 large onion
- 2 garlic cloves
- 1 tbsp olive oil
- 1 tsp of SACO Ginger Flakes
- 900ml vegetable stock
- salt
- fresh coriander
- sprinkle of nutmeg (optional)
INSTRUCTIONS:
Wash and dice the carrots and the onion
Mince the garlic and keep it on the side
Heat a pan to medium-low heat
Add the olive oil and let it heat for a few seconds
Add the carrots and the onion first and stir frequently
Add the minced garlic and the ginger flakes, and let them sweat for a few minutes with the other vegetables
Once the onion and the garlic look translucent, pour in the vegetable stock, cover with a lid and simmer for 20-25 minutes
Add a pinch of freshly chopped coriander and adjust the salt.
Let rest for 10 minutes then pour the soup into a blender.
Serve topped with the remaining chopped coriander and a sprinkle of nutmeg
TIPS: Serve with a handful of homemade croutons or with a slice of grilled sourdough bread
