Baobab Pancake Recipe
Pancakes are a family favourite in our home. Our kids enjoy making them and eating them. One thing I love about this recipe is its versatility. You can swap dairy milk for plant-based, leave out the eggs for a vegan version, or add baobab powder for a subtle fruity citrus flavour that makes them taste different from regular pancakes without being overwhelming. The recipe takes about five minutes to mix and another few minutes to cook. Stack them high and serve with maple syrup, lemon and sugar, or sliced banana.
Ingredients
- 1 tsp SACO Baobab Powder
- 100g plain flour
- 2 eggs
- 1/2 tsp vanilla extract
- 300ml semi-skimmed milk
- 1 tbsp sunflower oil, plus extra for frying
- Pinch salt
Method
- Add all the ingredients and just 50ml of the milk of the 300ml into a bowl.
- Whisk until you have a smooth thick paste.
- Add the rest of the milk and mix again.
- Heat a frying pan with a little sunflower oil. When the pan is smoking, ladle some batter into it.
- Cook for about 30 seconds then flip onto the other side.
- Serve with your favourite toppings.
