Baobab Vegan Pancakes
There's a misconception that vegan pancakes won't turn out right without eggs and dairy milk. I thought that too until I actually made them. They work just as well as regular pancakes. The apple cider vinegar and baking powder give you the lift, and baobab powder adds a fruity citrus flavour that makes them taste different in a good way. Good for Shrove Tuesday if you've got vegan family members, or just for a weekend breakfast when you don't have eggs in the fridge. Serve with maple syrup, jam, or vegan chocolate spread.
Ingredients
- 1 tsp SACO Baobab Powder
- 125g flour
- 1 tsp baking powder
- 1 tsp vanilla
- 2 tbs sugar
- 1 tbs apple cider vinegar
- 1 pinch of salt
- 250ml plant-based milk
- To serve: maple syrup, jam, vegan chocolate spread, sugar and lemon
Method
- Add all the ingredients into a bowl and just 50ml of the plant-based milk of your choice.
- Whisk until you have a smooth thick paste.
- Add the remaining milk while whisking to loosen the batter.
- Wipe the pan with oil and heat it to medium heat.
- Ladle some batter onto the pan and spread the mixture in a circle.
- Let cook for about 30 seconds and flip onto the other side.
- Serve with your favourite toppings.
