Plum and Baobab Baked Oats
Plums have a short season, which means when they show up you need to have a plan for them. This recipe uses them in a way that feels right for autumn without being heavy. The tartness from the plum gets balanced by a drizzle of agave syrup, and baobab powder adds a citrus brightness that keeps everything from feeling too sweet. Ingredients
- 50g gluten-free oats
- 1 tsp baking powder
- 1 tsp SACO Baobab Powder
- 125ml almond milk (or your favourite milk)
- Strawberry Crush flavour drops (optional)
- Agave syrup
- 1 plum
Method
- Preheat the oven to 180°C.
- Grease a small ramekin.
- In a bowl, combine all the dry ingredients with the milk.
- Mix until well combined.
- Cut the plum in half. Dice one part and slice the rest.
- Stir in the diced plum into the mix.
- Transfer the mixture to the prepared ramekin. Bake for 20 minutes, or until the top is golden brown.
- Add some slices of plum to decorate the top and serve.
