Plum and Baobab Baked Oats

Plums have a short season, which means when they show up you need to have a plan for them. This recipe uses them in a way that feels right for autumn without being heavy. The tartness from the plum gets balanced by a drizzle of agave syrup, and baobab powder adds a citrus brightness that keeps everything from feeling too sweet. Ingredients

  • 50g gluten-free oats
  • 1 tsp baking powder
  • 1 tsp SACO Baobab Powder
  • 125ml almond milk (or your favourite milk)
  • Strawberry Crush flavour drops (optional)
  • Agave syrup
  • 1 plum

Method

  1. Preheat the oven to 180°C.
  2. Grease a small ramekin.
  3. In a bowl, combine all the dry ingredients with the milk.
  4. Mix until well combined.
  5. Cut the plum in half. Dice one part and slice the rest.
  6. Stir in the diced plum into the mix.
  7. Transfer the mixture to the prepared ramekin. Bake for 20 minutes, or until the top is golden brown.
  8. Add some slices of plum to decorate the top and serve.
