Baobab and Turmeric Rice
If you've only used baobab powder in smoothies and porridge, this recipe shows you what it does in savoury cooking. The citrus flavour works differently when it's mixed with turmeric and toasted with rice. In West African cuisine, baobab powder is used as a spice to add a zingy note to dishes. The turmeric gives you the colour, the baobab gives you the sharpness. Serve it with vegetable stew and plantains, or whatever curry you usually make. The rice takes about twenty minutes once you've got everything prepped.
Ingredients
- 1 big onion
- 2 cloves of garlic
- 1 cup easy cook long grain rice
- 2 tbsp SACO Baobab Powder
- 2 tsp turmeric
- Pinch of white pepper
- 1 handful of coriander
- 2 cups of water
- 1 tsp salt (optional)
- 3 tbsp sunflower oil
Method
- Wash the rice and keep it on the side.
- Add the oil to a pan and, when hot, add the finely chopped onion and garlic.
- Cook until translucent then add the rice, salt, baobab powder, coriander, and turmeric.
- Stir the rice until it is fully coated and toast for 1 minute.
- Add water and cover the pan.
- Cook the rice on low heat until it's done.
- Let rest for 5 minutes, then fluff with a fork and serve with your favourite stew or curry.
