Carrot and Ginger Soup
I love soups! They are easy to make, you can add as many or as few ingredients as you like and you can have them anywhere and anytime you want. This carrot and ginger soup is made with a teaspoon of SACO ginger flakes. They come in handy when you don't have time to peel, chop and grate fresh ginger.
Ingredients
- 500g carrots
- 1 large onion
- 2 garlic cloves
- 1 tbsp olive oil
- 1 tsp SACO Ginger Flakes
- 900ml vegetable stock
- Salt and pepper to taste
- Fresh coriander or parsley to serve
Method
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic and cook until soft, about 5 minutes.
- Add the carrots, ginger flakes, and vegetable stock.
- Bring to a boil, then reduce heat and simmer for 20 minutes until carrots are tender.
- Blend until smooth using a hand blender or food processor.
- Season with salt and pepper.
- Serve with a sprinkle of fresh herbs.
